Does the All Subitems trigger work with custom status labels or just 'Done'?

It works with any custom status label you define. Unlike monday.com's native 'all subitems done' trigger, Community Cookbook lets you specify any status — 'Approved', 'Published', 'Passed', or whatever your workflow needs.

What happens if a subitem status changes back after all reached the target?

The trigger only fires when ALL subitems simultaneously have the target status. If one changes back afterwards, the parent status is not automatically reverted — you would need a separate automation for that.

Is there a limit to how many subitems the trigger monitors?

No limit from Community Cookbook's side. The trigger checks all subitems on the parent item regardless of how many there are.
